I want this course to furnish you not just with recipes to cook from but with a 360 degree understanding of how to cook vegetarian food. If you don't have all the ingredients for a recipe remember you can always tweak recipes to what you love and get excited by.

How to Put a Recipe Together - My Cooking Formula

  1. The hero vegetable is the key element of the meal.
  2. You then have the backup vegetable.
  3. An accent vegetable adds textural interest.
  4. An umami flavour imparts a sense of richness.
  5. Something green and fresh adding a verdant grassy flavour.
  6. Lastly, add texture and crunch to your dish.

Cooking Formula Example: Tomato and Corn Summer Salad

  1. The hero vegetable is tomato.
  2. The backup vegetable is sweetcorn.
  3. Spring onion acts as an accent, imparting an interesting texture.
  4. Pecorino cheese is the umami flavour imparting a sense of richness.
  5. Basil and mint add something green and fresh.
  6. I added texture with the croutons and almonds, which give some chew and crunch.
