I'm not a nutritionist. But I am passionate about making and eating food that makes me feel good. Eating well is about the experience of joy and the connection that we have when we eat.
I think it's important to remember that we are all individuals and no one can tell you what is right for you and your body. Only you can decide on the food that makes you feel good. Eating well is often much simpler than it is made out to be. I don't think the grouping of food into 'good' and 'bad' is a helpful thing, associating food with guilt or bad feelings can be unhelpful.
Eating well is about putting as many fruits and vegetables, whole foods and raw ingredients together. It can be helpful to stop thinking about food as individual meals and think instead about what we're eating over a week.
When I think about eating the rainbow, I think about everything I eat, not just fruit and veg, from pulses and herbs to nuts and spices. It's also very important to eat as much real food as possible. That is, food that isn't processed and doesn't have a long list of ingredients. Filling our diets with fruit and vegetables, shopping sustainably and focussing on the joy and connection of food is key.
