Having a few simple pieces of kit can change the way you cook. Amelia reveals what not to buy and then takes you through the essentials, the nice-to-haves, and the investment pieces.

From the Lesson Workbook

Chopping Boards

I recommend having multiple chopping boards to avoid cross-contaminating the foods you're preparing. Such contamination may cause changes in the flavour of the food or, in the worst-case scenario, food poisoning. I recommend keeping one chopping board for raw meat, one for raw fish, one for fruit and vegetables (or two separate ones because the flavour of garlic and onions may contaminate your fruit), one for cooked meats, and one for bread and dairy products.

Personally, I prefer wooden chopping boards because they have natural antibacterial properties and can absorb the shock of a knife. If you don't have this many chopping boards, the important thing is to wash them thoroughly in hot soapy water and dry them between and after each use.
